Our specially constructed canapés are designed to bring attention to the water footprint of different foods. Each option is portioned to a size that would require 50 litres of water to produce. This means that meat dishes are smaller and fewer available in comparison to vegetarian dishes as a visual representation of their environmental impact.
Canapés are then made available through a token system designed and administered by Post Dining staff. Guests (welcome to spend a small amount of tokens however they wish) find their regular decision making to be swayed by the ‘cost’ of each item.
